The best quality Manuka honey is a fantastic substitute for refined sugar. It is, however, important to note that it functions very differently from refined sugar.
Firstly, it is liquid. When you are substituting refined sugar with Manuka honey, it is important to reduce the amount of liquid in other ingredients. A good rule of thumb is to reduce liquids by ¼ cup to every cup of honey.
It is also not recommended to entirely replace the sugar. This will completely change the composition of the cake or cupcake and can create a dense, sticky batter that struggles to rise.
