Pesto Eggs and Banana Honey Toast

Ingredients:

• 3 tbsp pesto 
• 2 eggs
• spinach 
• 2 eggs

Method:

1. Place pesto in pan and let it melt like butter 
2. Add in spinach and eggs and cook until the egg whites whiten 
3. Top pesto eggs with goat cheese 

You can pair the pesto eggs with sourdough toast topped with 1/2 mashed banana, chia seeds, cinnamon and a drizzle of PURITI honey.
