Plant Based Chocolate Peanut Butter Truffles

Ingredients: 

Peanut Butter Filling

  • ⅓ cup thick natural peanut butter 
  • 1 tbsp PURITI Manuka Honey 
  • ⅓ almond flour 
  • ½ cup quinoa puffs 

Chocolate Coating

  • ¼ cup chocolate chunks 
  • 1 ½ tablespoon coconut oil 

Method: 

  1. Combine Peanut Butter and honey in a bowl and mix
  2. Once mixed add almond flour, mix again then add quinoa puffs 
  3. Roll into small balls
  4. Refrigerate balls for 1 hour  
  5. Melt chocolate and coconut oil 
  6. Coat balls in chocolate and refrigerate for at least 3 hours
